You may find it tastes a bit more flavorful when it has sat overnight in the fridge. That just gives it extra time to marinate.

How to Make Flavorful Confetti Salsa

You cannot find an easier to make recipe to make. Who has extra time to cook these days? Thankfully this recipe can be put together in less than 10 minutes. This recipe does have a little bit of chopping, but that’s the hardest part. Chop the cilantro, Roma tomatoes, and garlic and add them to a bowl. Open your cans of beans and corn and toss them into a bowl. Squeeze in juice from the limes and stir, stir, stir!

You can eat it immediately after stirring, or you can refrigerate it for 1-2 hours. My husband prefers it chilled, but I like it best room temperature. You may also enjoy adding diced avocado to the top. I don’t recommend stirring it into the mixture though because the avocado doesn’t store well.

A Few Notes About This Confetti Salsa Easy and Fresh

  • Eat it by the spoonful or pair it with a chip! Try to pick out a healthy tortilla chip.
  • Vegetables make excellent scoops too; you could use bell peppers, romaine leafs, or cucumber slices.
  • For extra ease, use a can of diced tomatoes instead of Roma tomatoes. Canned tomatoes is certainly easier. Roma tomatoes brings a bit of extra freshness to it.
  • You could also top it with diced avocado. Don’t mix avocado into the entire salsa though. It doesn’t store well for leftovers.
  • Easy to make confetti salsa is perfect for your next party.
  • Store in airtight container in the refrigerator for 3-4 days.

Ingredients

  • 3 cans 3 corn

  • 2 cans 2 black beans

  • 2 cups 2 chopped cilantro

  • 5 whole 5 roma tomatos – diced

  • 4 whole 4 limes (juiced)

  • 4 cloves 4 garlic (diced)

  • Salt and pepper as desired

Directions

  • In large bowl, gently mix together corn, black beans, tomatoes, garlic, cilantro, and juice from 2 limes.
  • Serve immediately or refrigerate for 1-2 hours to chill

Notes

  • Optional: add diced avocado to the top. We don’t recommend mixing it within as the avocado can get a bit messy and it does not store well.
